There are those who say "small beer & Negroni" with a little nod — it's a classic. But let's make one thing clear first: when we write "small beer" here, we mean the little 0.25 L beer. That half of the half-litre that's perfect to hold between chatting and making further plans. It's compact, social and just right for keeping the mood up — without taking over the whole evening.

The Martini itself: a short history

The Martini's exact origin is one of cocktail history's great unsolved arguments — candidates range from a gold-rush-era drink called the "Martinez" served in San Francisco in the 1860s, to a New York bartender simply shortening "Martinez" over time. What's not disputed is that by the early 1900s it had settled into something close to its modern form: gin, dry vermouth, stirred or shaken, garnished with an olive or a lemon twist. The ratio of gin to vermouth has swung wildly over the decades — wetter in the 1900s, bone-dry by the 1950s and 60s — which is part of why there's no single "correct" Martini, just the one you prefer.

The Bar Boca classic (yes, they do this right)

If you know Bar Boca, you know that late-night comfort and a bit of playful madness live side by side. This tiny, five-table cocktail bar in Grünerløkka has been running since 1998 — a genuine Oslo institution with a 1950s-inspired interior largely built by hand by owner Jan Vardøen, and a reputation for arguably the best dry Martini, classic Margarita and Bloody Mary in the city. There you can get a little martini that goes with small beers — often served as a little "after-beer" between 00:00 and 02:00. No pomp — just timing and an understanding of what works with the people who are there.

Their trick? Mini-martini, cold glass, and a spread of small beers in different flavours. Perfect for sharing, a photo, and moving the party on. Given how small the place is, weekdays are your best bet for actually getting a seat — weekends get packed fast.

Suggested small-beer-and-drink combos — easy to order, easy to like

Classic winners

Smoked salmon canapé + Vodka Martini (dry) — silky salmon, clean vodka. It works.

Cured ham & brie + Negroni (before midnight) — salty + bitter = a safe combo.

Late-night favourites (try after 11:30 pm)

Mini steak + Dry Martini — a hearty bite, a dry finish.

Truffle-mushroom canapé + Dirty Martini — umami + salt from olive brine, perfect late-night mood.

How to order like a pro (without being stingy)

Mini recipes the bartender (and you at home) can use

Mini Dry Martini: 40 ml gin, 6 ml dry vermouth. Stir, strain, lemon twist.

Dirty mini: As above + 10–15 ml olive brine. Goes with rich canapés.

Tequila martini: 35 ml reposado, 10 ml dry vermouth, 5 ml mezcal — smoke without going overboard.

No one should use these as an excuse to overdo it — we recommend small glasses and plenty of water.
